Quick, Healthy Spaghetti Squash with Chicken Sausage & Veggies

It’s hard. Healthy, fast dinner options. Ain’t nobody got time for that. If you’ve been to my house, I’ve probably fed you chicken apple sausage before. It’s easy, a good protein source, flavorful and you can add just about anything to it and get a yummy meal! Here’s one simple meal I make often (with regular, quinoa brown rice pasta too!) Instant Pot Spaghetti Squash with Chicken Sausage and Veggies!

I’ll skip the mumbo jumbo and give you the deets to this Instant Pot dinner, fast.

INSTANT POT SPAGHETTI SQUASH WITH CHICKEN SAUSAGE AND VEGGIES

1 Spaghetti Squash

4-6 Chicken Apple Sausage Links (or chicken sausage of your choice)

Whatever Veggies you have in the fridge (I used some onion and a Bell Pepper)

Jar of Marinara (or sauce of choice, I like to use Kirkland Pesto too!)

Olive Oil

Garlic Salt

Parmesan for topping!

You’ll quickly figure out I don’t often have exact measurements for any recipe I do! I’m sorry! But I’ll give estimates!

INSTRUCTIONS:

  1. Cut spaghetti squash in half (not length wise) and place on your Instant Pot Trivet. Pour a cup of water into the bottom, set “pressure cook” for 9 minutes and then quick release once done!

  2. While spaghetti squash is cooking, cut up the rest of your veggies and throw in a skillet or pan with a little olive oil. Cut up your sausage links and add to the veggies. Cook together for 6-10 minutes or until all the veggies are softened and the chicken sausage is browned a bit. Add your jar of marinara or sauce of choice, stir and heat for a few minutes.

  3. Remove insides of spaghetti squash with a fork into a separate bowl. Throw out skin. Pour a little olive oil on squash and some garlic salt, stir.

  4. Serve your chicken sausage mixture on top of squash, sprinkle some parm, and enjoy!

**you can sub out spaghetti squash for your favorite pasta and it’s just as good! Super simple, super easy, and healthy!

***To make a “one pot” meal, just cook the squash ahead of time and set aside. Then cook your veggies, sausage and sauce on the ‘saute’ method in the Instant Pot like you would on the stove and serve! Takes a little more time, but then you only have one pot to clean rather than two!
